Fast Fuel: BodyBuilder's Dream Egg Bake

Serves: 6-8 (large slices)

 

 

Ingredients:

  • 1 cup organic spinach
  • 1 cup organic kale
  • 4 tablespoons butter, sliced
  • 1/3 cup thinly sliced green onions or red onions
  • 1 tomato, sliced thin
  • 12 eggs, beaten
  • 2 cups full fat cottage cheese
  • Salt and fresh ground black pepper to taste
  • Fresh parsley to garnish
  • Coconut oil spray

 

Instructions:

  1. Preheat oven to 350F.
  2. Spray a large casserole dish with coconut oil spray.
  3. Add vegetables to the dish.
  4. Whisk the eggs, cottage cheese, salt, and pepper in a large bowl. Pour the egg mixture over the vegetable combination. Add tomato slices. Top with butter slices.
  5. Bake about 35 minutes, or until the mixture is completely set and firm and starting to brown.
  6. Let cool about 15 minutes before cutting.

 

Tip: This egg bake can be cut into individual servings and kept in the refrigerator for on the go breakfasts and lunch.
