Prenatal Nourishment: Simple Slow Cooker Chicken Congee

Chicken congee

 

Serves: 4

 

 

Ingredients:

  • 8 cups bone broth (chicken or beef)
  • 1 cup uncooked jasmine rice
  • 1 tablespoon grated, peeled, fresh ginger
  • 1 1/2 teaspoons kosher salt
  • 2 carrots, chopped
  • 3 pounds bone-in, skin-on chicken breasts

 

Instructions:

  1. Place ingredients in a 6-quart electric slow cooker.
  2. Cover and cook on low 8 hours.
  3. Remove chicken.
  4. When cool enough to handle, remove skin and bones, and discard.
  5. Shred chicken into pieces.
  6. Return chicken to the slow cooker.
  7. Cook for 30 more minutes and serve.

 

Notes: Leftover congee can be kept in the refrigerator for up to four days and simply warmed as needed on the stovetop.

Serves: 4

 

Ingredients:

  • 8 cups vegetable broth
  • 2 carrots chopped
  • 1 cup uncooked jasmine rice
  • 1 tablespoon grated, peeled, fresh ginger
  • 1 1/2 teaspoons kosher salt

 

Instructions:

  1. Place ingredients in a 6-quart electric slow cooker.
  2. Cover and cook on low for 6 hours.
  3. Stir and serve.
