Oatmeal Raisin Cookies
coconut oil
shredded coconut
fenugreek seeds
anise seed
flax seed meal
chopped almonds
date
prunes ( chopped )
raisins
oats ( gluten-free )
almond meal
vanilla
pink Himalayan salt
baking soda
baking powder
eggs ( pasturized )
maple syrup
chocolate chips
Preheat your oven to 350 degrees.
Mix oil, vanilla, seeds, almonds, dates, raisins, ½ cup of oats, and prunes in a food processor.
Mix all other ingredients together in a bowl.
Add dry ingredients to wet and begin to fold in the chocolate until evenly mixed.
Spoon one tablespoon of batter onto a parchment paper-lined pan.
Bake for 12 minutes.
To freeze: Place cooled cookies on parchment and place in a freezer-safe storage bag.
Note: for the nut-free version remove almond meal and almonds from the recipe
