quinoa ( rainbow quinoa )

1/2 cup

chicken broth ( or vegetable broth )

2/3 cup

kale ( leaves only, very finely chopped )

1 bunch

garlic powder

1/8 tsp


1/8 tsp

black pepper

1/8 tsp, ground

pink Himalayan salt ( or smoked salt )

1/4 tsp

parmesan cheese ( finely shredded plus more for garnish (optional) )

2 tbsp

cremini mushrooms ( stem removed )

Step 1

Preheat oven to 425 degrees.

Step 2

While the oven is preheating, rinse quinoa and place in a saucepan with the broth.

Step 3

Simmer quinoa until most of the liquid is absorbed.

Step 4

Add kale to the quinoa and finish cooking until all liquid is absorbed.

Step 5

Add remaining seasonings to the quinoa and set aside.

Step 6

While quinoa is cooking, brush mushrooms with a small amount of olive oil and place them on a baking sheet.

Step 7

Bake 10 minutes and remove from oven.

Step 8

Stuff mushrooms with the quinoa mixture and top with parmesan if desired.

Step 9

Bake an additional 10 minutes.

Step 10

Remove from oven and place on a serving dish. Serve warm.
