Prenatal Nourishment: Simple Slow Cooker Chicken Congee
Serves: 4
Ingredients:
- 8 cups bone broth (chicken or beef)
- 1 cup uncooked jasmine rice
- 1 tablespoon grated, peeled, fresh ginger
- 1 ½ teaspoons kosher salt
- 2 carrots, chopped
- 3 pounds bone-in, skin-on chicken breasts
Instructions:
- Place ingredients in a 6-quart electric slow cooker.
- Cover and cook on low 8 hours.
- Remove chicken.
- When cool enough to handle, remove skin and bones, and discard.
- Shred chicken into pieces.
- Return chicken to the slow cooker.
- Cook for 30 more minutes and serve.
Notes: Leftover congee can be kept in the refrigerator for up to four days and simply warmed as needed on the stovetop.

- Cover and cook on low for 6 hours.
- Stir and serve.
