Lactation Nourishment: Oatmeal Raisin Cookies

Prep time: 10 minutes

Cooking time: 12 minutes

Serves: 3-4 dozen cookies

 

 

Ingredients:

  • 1/2 cup coconut oil, melted
  • 1/3 cup shredded coconut
  • 2 tablespoon fenugreek seeds
  • 1 tablespoon anise seeds
  • 1/3 cup flax seeds
  • 1 cup almonds chopped
  • 1 cup chopped dates
  • 1 cup chopped prunes
  • 1 cup raisins
  • 1 cup gluten-free oats
  • 1 cup almond meal
  • 1 teaspoon vanilla
  • 1/4 teaspoon pink salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 5 pasturized eggs, depending on size
  • 1/2 cup maple syrup
  • 1 cup chocolate chips (Enjoy Life brand)

 

Directions:

  1. Preheat your oven to 350 degrees.
  2. Mix oil, vanilla, seeds, almonds, dates, raisins, ½ cup of oats, and prunes in a food processor.
  3. Mix all other ingredients together in a bowl.
  4. Add dry ingredients to wet and begin to fold in chocolate until evenly mixed.
  5. Spoon one tablespoon of batter onto a parchment paper lined pan.
  6. Bake for 12 minutes.

 

To freeze: Place cooled cookies on a parchment and place in a freezer-safe storage bag.
