Lactation Nourishment: Oatmeal Raisin Cookies

Serves: 3-4 dozen cookies
Ingredients:
- ½ cup coconut oil, melted
- ⅓ cup shredded coconut
- 2 tablespoon fenugreek seeds
- 1 tablespoon anise seeds
- ⅓ cup flax seeds
- 1 cup almonds chopped
- 1 cup chopped dates
- 1 cup chopped prunes
- 1 cup raisins
- 1 cup gluten-free oats
- 1 cup almond meal
- 1 teaspoon vanilla
- ¼ teaspoon pink salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 5 pasturized eggs, depending on size
- ½ cup maple syrup
- 1 cup chocolate chips (Enjoy Life brand)
Directions:
- Preheat your oven to 350 degrees.
- Mix oil, vanilla, seeds, almonds, dates, raisins, ½ cup of oats, and prunes in a food processor.
- Mix all other ingredients together in a bowl.
- Add dry ingredients to wet and begin to fold in chocolate until evenly mixed.
- Spoon one tablespoon of batter onto a parchment paper lined pan.
- Bake for 12 minutes.
To freeze: Place cooled cookies on a parchment and place in a freezer-safe storage bag.
