Beat the Heat With a Post-Workout Popsicle Party

Hot weather got you down? Replenish after a workout with one of these paleo-perfect popsicles.

Living in southern California, all year is popsicle season. But by summer I am ready to have at least one a day, especially after a workout. I often find myself wishing for a cold treat to cool my body down between a sweat fest and my next meal.

The Popsicle Solution

Last week the idea of a healthy version of popsicles seemed to be the answer to my post-workout prayers. However, living a non-dairy and sugar-free life makes buying popsicles a challenge. So in typical fashion, I decided to make some myself. I am happy to report I have successfully recreated both popsicle and creamsicle varieties of a favorite summer treat.

Making popsicles yourself allows you to limit not only ingredients but also the exposure to other chemicals and materials. For example, it was easy to find molds that were BPA-free.

These popsicles could not be easier to make, and it’s fun for the family to get involved. I can imagine all kind of varieties that include many different fruits and even herbs. Let your imagination run wild and have fun making these simple summer treats the entire family will enjoy.

Berry Blast Creamsicle

Ingredients:

  • 1 can of full fat coconut milk
  • 2 Tablespoons of raw local honey
  • 1 Tablespoon of organic vanilla
  • Frozen or fresh assorted berries

Method:

  1. Mix all ingredients except berries on the stove. Heat until mixed and slightly warm.
  2. Let sit on stove until cool, then add to your molds.
  3. Cut up berries, or leave whole if desired.
  4. Pour coconut mixture into mold, filling about ⅓ way. Next, add your desired amount of berries.
  5. Place in freezer for at least 5 hours.
  6. When ready to eat, place mold into a warm water bath for about 30 seconds. Remove creamsicles from mold and enjoy.

Party in a Popsicle

Ingredients:

  • 1 liter of coconut water
  • 2 Tablespoons of raw local honey
  • 1 Tablespoon of organic vanilla
  • Frozen or fresh fruit

Method:

  1. Mix all ingredients except fruit into a blender and blend well. (You can add the fruit if you want it chopped throughout the popsicle or leave it out. It is the chef’s preference.)
  2. Cut up fruit if you left it out of the blender, or leave whole if desired.
  3. Pour all but fruit into mold, filling about ⅓ way.
  4. Add your desired amount of fruit.
  5. Place in freezer for at least 5 hours.
  6. When ready to eat, place mold into a warm water bath for about 30 seconds. Remove popsicles from mold and enjoy.
