Serves: 6-8 (large slices)
Ingredients:
- 1 cup organic spinach
- 1 cup organic kale
- 4 tablespoons butter, sliced
- ⅓ cup thinly sliced green onions or red onions
- 1 tomato, sliced thin
- 12 eggs, beaten
- 2 cups full fat cottage cheese
- Salt and fresh ground black pepper to taste
- Fresh parsley to garnish
- Coconut oil spray
Instructions:
- Preheat oven to 350F.
- Spray a large casserole dish with coconut oil spray.
- Add vegetables to the dish.
- Whisk the eggs, cottage cheese, salt, and pepper in a large bowl. Pour the egg mixture over the vegetable combination. Add tomato slices. Top with butter slices.
- Bake about 35 minutes, or until the mixture is completely set and firm and starting to brown.
- Let cool about 15 minutes before cutting.
Tip: This egg bake can be cut into individual servings and kept in the refrigerator for on the go breakfasts and lunch.
