Christmas Morning Crustless Quiche
Prep time: 10 minutes
Cooking time: 50 minutes
Serves: 4-6
Ingredients:
- 14 pastured eggs, beaten
 - 1 cup full-fat organic heavy cream
 - 1 head of broccoli, chopped
 - 2 tablespoons of Kerrygold butter
 - ½ cup of grated cheese for quiche (e.g., cheddar, parmesan, Monterey jack, Swiss, etc.)
 
Topping:
- ½ cup gluten free bread crumbs
 - ½ cup Kerrygold butter
 - ½ cup of grated cheese for topping (e.g., cheddar, parmesan, Monterey jack, Swiss, etc.)
 
Directions:
- Preheat oven to 300 degrees.
 - Add all ingredients to a butter greased 9-inch pie pan (reserve ½ cup of cheese for topping).
 - Bake for 45 minutes.
 - Add ½ cup of cheese and mixed breadcrumbs and butter for topping and bake 5 minutes longer.
 - Let cool 5-10 minutes before slicing.

 - 2 tbsps of coconut oil
 - ½ cup of grated zucchini
 
Topping:
- ½ cup gluten free bread crumbs
 - ½ cup coconut oil
 - ½ cup of grated cheese for topping (e.g., cheddar, parmesan, Monterey jack, Swiss, etc.)
 
Directions:
- Preheat oven to 300 degrees.
 - Add all ingredients to a coconut oil greased 9-inch pie pan.
 - Bake for 45 minutes.
 - Add mixed breadcrumbs and oil for topping and bake 5 minutes longer.
 - Let cool 5-10 minutes before slicing.
