Christmas Morning Crustless Quiche

Prep time: 10 minutes

Cooking time: 50 minutes

Serves: 4-6

 

 

 Ingredients:

  • 14 pastured eggs, beaten
  • 1 cup full-fat organic heavy cream
  • 1 head of broccoli, chopped
  • 2 tablespoons of Kerrygold butter
  • ½  cup of grated cheese for quiche (e.g., cheddar, parmesan, Monterey jack, Swiss, etc.)

 

Topping:

  • ½ cup gluten free bread crumbs
  • ½  cup Kerrygold butter
  • ½  cup of grated cheese for topping (e.g., cheddar, parmesan, Monterey jack, Swiss, etc.)

 

Directions:

  1. Preheat oven to 300 degrees.
  2. Add all ingredients to a butter greased 9-inch pie pan (reserve 1/2 cup of cheese for topping). 
  3. Bake for 45 minutes. 
  4. Add 1/2 cup of cheese and mixed breadcrumbs and butter for topping and bake 5 minutes longer.
  5. Let cool 5-10 minutes before slicing.

 

Dairy Free Christmas Morning Crustless Quiche

  • 1 head of broccoli, chopped
  • 2 tbsps of coconut oil
  • ½  cup of grated zucchini

 

Topping:

  • ½ cup gluten free bread crumbs
  • ½  cup coconut oil
  • ½  cup of grated cheese for topping (e.g., cheddar, parmesan, Monterey jack, Swiss, etc.)

 

Directions:

  1. Preheat oven to 300 degrees.
  2. Add all ingredients to a coconut oil greased 9-inch pie pan.
  3. Bake for 45 minutes. 
  4. Add mixed breadcrumbs and oil for topping and bake 5 minutes longer.
  5. Let cool 5-10 minutes before slicing.
